Crockpot Thai Peanut Chicken

One of my favorite Advocare bloggers, AdvocareRunner, shares some great clean recipes on her blog.  This clean crockpot Thai peanut chicken is one of my favorites.

Clean Thai Peanut Chicken

Crockpot Thai Peanut Chicken
 
Ingredients
  • - 2 lbs chicken tenderloins
  • - 1 white onion
  • - 1 red pepper
  • - ¾ cups natural, creamy Peanut Butter
  • - ¾ cups organic, low sodium chicken broth
  • - 1 lime juiced
  • - ⅓ cup low sodium soy sauce
  • - 1 tsp cumin
  • - sprinkle of curry
  • - chopped scallions
  • - crushed peanuts
  • - chopped cilantro
Instructions
  1. In a bowl combine peanut butter, chicken broth, lime juice, soy sauce, cumin, and curry. Pour this mixture over the above 3 ingredients.
  2. Cook in crockpot on high for 3-4 hours. Could be made on the stove top as well.
  3. Serve over spinach, arugula, brown rice, or brown rice noodles. Top with chopped scallions, crushed peanuts, and chopped cilantro
