Crockpot Thai Peanut Chicken
 
Ingredients
  • - 2 lbs chicken tenderloins
  • - 1 white onion
  • - 1 red pepper
  • - ¾ cups natural, creamy Peanut Butter
  • - ¾ cups organic, low sodium chicken broth
  • - 1 lime juiced
  • - ⅓ cup low sodium soy sauce
  • - 1 tsp cumin
  • - sprinkle of curry
  • - chopped scallions
  • - crushed peanuts
  • - chopped cilantro
Instructions
  1. In a bowl combine peanut butter, chicken broth, lime juice, soy sauce, cumin, and curry. Pour this mixture over the above 3 ingredients.
  2. Cook in crockpot on high for 3-4 hours. Could be made on the stove top as well.
  3. Serve over spinach, arugula, brown rice, or brown rice noodles. Top with chopped scallions, crushed peanuts, and chopped cilantro
