Grilled Lemon Pork Chops with Cauliflower Mash

One of our favorite comfort food swaps is mashed cauliflower instead of mashed potatoes.  These grilled lemon pork chops with cauliflower mash were a big hit with the entire family!

Grilled Lemon Pork Chops over Mashed Cauliflower

Grilled Lemon Pork Chops
  • ¼ cup lemon juice
  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ¼ teaspoon dried oregano
  • ¼ teaspoon pepper
  • 6 (4 oz) boneless pork loin chops
  1. In a Ziploc bag combine all ingredients. Refrigerate 2 hours or overnight.
  2. Preheat your grill for high heat. Remove the pork chops from the bag and transfer remaining marinade to a saucepan. Bring marinade to a boil, remove from heat and set aside.
  3. Grill pork chops for 5 to 7 minutes per side, basting frequently with boiled marinade.

Mashed Cauliflower
  • 1 head of cauliflower, trimmed and cut into small florets
  • 1 tablespoon extra virgin olive oil
  • Sea salt and black pepper to taste
  1. Bring a large pot of water to a boil. Add cauliflower and cook until very tender (about 10 minutes). Reserve ¼ cup of the cooking liquid and then drain well. Transfer cauliflower to a food processor. Add oil and reserved water 1 tablespoon at a time until puree is smooth. Season with salt and pepper.
