Kale and Arugula Salad with Chicken, Avocado, Watermelon, Goat Cheese, and Sunflower Seeds

We frequent a local burger joint called Hopbunz and I fell in love with this kale and arugula salad with chicken, avocado, watermelon, goat cheese, and sunflower seeds which they call the Kale Mary.  I’ve eaten it so often that I wanted to try to recreate it at home.

Kale and Arugula Salad with Chicken, Avocado, Watermelon, Goat Cheese, and Sunflower Seeds

Ingredients
  • 3 cups of Kale
  • 3 cups of Arugula
  • 2 cups diced watermelon
  • ¼ cup crumbled goat cheese
  • ¼ cup toasted sunflower seeds
  • 1 avocado diced
  • 2 boneless-skinless chicken breasts
  • Your favorite vinaigrette dressing
Instructions
  1. Grill and slice your 2 boneless-skinless chicken breasts
  2. Combine your Kale, Arugula, watermelon, goat cheese, sunflower seeds, and avocado. Top with your sliced chicken breasts. And toss together with your favorite vinaigrette dressing.
