Watermelon and feta salad has become a summer staple around here. In the summer months we constantly have watermelon on hand as snack and it’s so simple to pair with feta for a quick BBQ side dish.
- ⅓ cup extra-virgin olive oil
- 3 tablespoons fresh lemon juice
- 2 teaspoons kosher salt
- 1 teaspoon Tabasco
- One 8-pound seedless watermelon cut into 1½ inch chunks
- 2 cups feta cheese
- In a large bowl whisk the oil, lemon juice, salt, and Tabasco. Add the watermelon and feta and toss gently.
