Hummus crusted chicken is one of our favorite clean meals. We often have it during our 24 Day Challenge but love it also as just an easy weeknight meal.
- 4 boneless, skinless chicken breasts
- salt and pepper
- 1 cup hummus
- 2 lemons
- 1 tsp smoked paprika
- Preheat the oven to 450 degrees. Prepare baking dish with cooking spray.
- Pat the chicken dry. Season the chicken breast with salt and pepper. Cover each chicken breast with the hummus so that the entire breast is covered. Squeeze the juice of one lemon over the chicken. Then sprinkle with smoked paprika.
- Bake for 25-30 minutes or until the chicken is cooked through.
