A couple of years ago the sweet Jen of Down with the Dearmores sent me her pot roast recipe (originally posted on Food.com). It is so simple and one of my favorite comfort meals!
SLOW COOKER POT ROAST

Ingredients
- 2lbs beef roast
- 4 potatoes, peeled and cut into 1-inch cubes
- 1½ cups baby carrots
- 1 large onion, quartered and peeled apart
- 1½ cups beef broth
- 1 (1.5oz) envelope of Knorr dry vegetable soup mix
Instructions
- Place roast into crockpot and surround with vegetables.
- Combine beef broth and vegetable soup mix and then add to crockpot. Cover and cook on low for 6-8 hours or high for 3-4 hours.
