Peach, Feta, and Arugula Salad with Champagne Vinaigrette

My mother-in-law made this peach, feta, and arugula salad with champagne vinaigrette when she came to visit once and it has become a summer staple around here ever since.

Peach, Feta, and Arugula Salad with Champagne Vinaigrette

Peach, Feta, and Arugula Salad with Champagne Vinaigrette

Ingredients
  • Arugula (5 oz pre-washed box fed our family of 4)
  • 1 Peach
  • ½ a white onion
  • Crumbled Feta
  • 2 teaspoons Dijon mustard
  • ¼ cup champagne vinegar
  • ¾ cup extra-virgin olive oil
  • ½ teaspoon salt
  • Pinch of freshly ground black pepper
Instructions
  1. Place your arugula into a bowl.
  2. Wash and cut your peach into slivers. Cut your onion into slivers as well. Place both on top of the bed of lettuce. Place crumbled feta over the top of the salad.
  3. Champagne Vinaigrette: In a small bowl combine mustard and vinegar; whisk together. While whisking constantly, slowly drizzle in olive oil. Season with salt and pepper.
